Wing Shack owner’s new venture, Sexy Sammies, set to open Friday in Greeley. Here’s what we know about the new restaurant.

When Brian Seifried decided to open another restaurant next to his newest Wing Shack location, he went with what he knew – delicious chicken.
Sexy Sammies, a new restaurant venture by Brian Seifried, owner of Wing Shack and co-owner of Luna’s Tacos & Tequila, is set to open Friday.
“For years we thought we’d like to diversify,” Seifried said. “Part of that was for our own creative drive. We also love Greeley and love doing business here.”
Sexy Sammies, 4318 W. 9th St. Rd., is located right next to Seifried’s new Wing Shack location. It worked out that the space – formerly 3 Bros Mexican Grill – was bigger than Wing Shack needed.
He originally planned for the space to function as part of Wing Shack, he said, but instead it grew into Sexy Sammies.
Folks can order tender baskets and boxes, a variety of sandwiches, and a side of fries or slaw.
For the vegetarians out there (yes, we do exist in Greeley), Sexy Sammies currently offers some secret menu grilled cheese sandwiches – rest assured there is no snarky commentary if you order one. In the future, Seifried said he plans to offer plant-based wings as well.
They also offer cane sugar soda and simple, tasty cocktails.
The future of ordering
One of the first things folks will notice is the tech-based ordering system.
To place an order, you use the kiosk near the entrance of the building. You scroll through the menu, punch in what you want, type in your phone number, and swipe your card. From there, you’ll get a text alerting you to when your food is ready to pick up at the back of the restaurant.
Folks can also order before they get to the restaurant using their own devices online if they want the food to be ready to go when they arrive.
The concept of no or limited-contact ordering became popular over the last year amid the pandemic, though Seifried said he thinks the future of fast-casual dining was heading that direction anyway.
What’s in a name?
Seifried admits the name is a bit cheeky. The sandwiches, he said, are obviously good looking.
“But there’s also some girl I’m in love with named Sam,” he said of his partner, Samantha Corliss. “So, there’s a double entendre there.”
Friday, the day the restaurant opens to the public, also happens to be Corliss’ birthday. Corliss said she’s excited for the new venture – even if it takes Seifried’s attention elsewhere on Friday.
Corliss and Seifried are both co-owners of Luna’s Tacos & Tequila, along with Ely Corliss, in downtown Greeley.
In an interview, Corliss told the NoCo Optimist they worked with the same interior designer who crafted Luna’s.
“I think Luna’s has proven that Greeley can handle a trendier place,” Corliss said.
When Karen Baumgartner and Cheyanne Coar sat down to eat at Sexy Sammies soft opening Tuesday, they decided to split their order and share with each other. That way, they figured, they could taste even more.
And it was worth it.
“I think it’s awesome,” Baumgartner said. “Everything tasted really good. We’ll be back!”
Coar said the fries might just be her new favorite in town.
