Luna's Tacos & Tequila buzzes with energy at a new Windsor location and brunch

The grass doesn’t have much time to grow beneath Samantha Corliss’ and Brian Seifried’s feet, except when they stop to savor the flavorful home runs they continue to serve Greeley patrons. 

Ever since the visionary co-owners of Lunas Tacos & Tequila opened the street taco spot next to Moxi Theater in downtown Greeley in 2018, Luna’s has become a Greeley staple, known for creating a new taco-fusion genre celebrated for eclectic, experimental pairings of tastes and textures.

Naturally, that made it time for Luna’s to branch out. So when an opportunity opened to develop a second Luna’s location in Windsor, they jumped. The Windsor location opens April 1.

Corliss and Seifried have a finger on the pulse of Weld County partly because of their dedication to enhancing the community’s infrastructure. 

“We strive to source locally whenever possible, and love supporting small, local, family-owned businesses like our own,” Corliss said in a news release.

The new venue offers much of what has made the Greeley location a success, with nooks that offer intimacy while drawing patrons into the world of pop art design. Seifried said the second floor in the new Windsor spot leads to a rooftop balcony with a killer view of the Front Range, putting it on the A-list for Northern Colorado gathering spots.

But as comfortably edgy as both locations are, it’s the food and bar program that brings people back.

Luna’s in Windsor has added new ideas to complement their menu classics, according to the release, including Honey Adobo elotes—savory sweet discs of corn cob slathered with honey adobo aioli, cotija cheese and a sprinkle of fresh cilantro—along with Luna’s original, slightly sinful way of enjoying corn on the cob, with a hearty dollop of mayo and cotija brightened with lime drizzle.

Underscoring the fusion aspect, the new menu also brings Nashville Hot Chicken Chicharrones and spicy chicken street tacos dressed with creamy slaw and spiked with dill pickles in the best Nashville way. And then there’s the General Tso taco. That’s right, it’s the same sweet fried chicken darling of Chinese restaurants across America layered on a taco instead of white rice. The version includes jicama slaw and chopped scallions laced with sesame crema.

Luna’s has also introduced birria to their patrons. The Jalisco-style stew marinates beef with chiles and slow-cooks it in a comforting mix of tomatoes, onions, garlic and Mexican spices and produces pull-apart tender meat with an aromatic red consomé. Enjoy birria nachos with queso, black beans, pickled red onion and guacamole. On Wednesdays and Sundays, you can also order birria tucked into tacos with cheese that are griddle-finished and served with traditional relishes like sliced radishes and red onions, and of course, a cup of consomé for dipping.

Windsor’s Luna’s continues the concept’s commitment to featuring one of the best tequila and mezcal collections in Colorado, with small production Mexican spirits, including Tequila Arette, one of the three oldest tequila producing families in Mexico. Arette’s 100% agave tequila partners with freshly squeezed juices to craft spirited cocktails and some new large format, shareable cocktails, the release said. The bar also features imported and local craft brews.   

Seifried said they introduced a brunch experience because it’s a laid back meal friends and family enjoy sharing.

“We brought in a little Colorado style with my family’s green chile recipe,” he noted. “In my mind, nothing says Colorado comfort food like a good green chili. Ours is a classic with flame roasted chiles, tender pork and tomatoes.”

Breakfast tacos and burritos round out the savory menu elements, while the churro French toast buns dripping with honey butter and strawberry habañero compote for dipping promise a hit with the sweet tooth brunch faction.

“Brunch is a great time to enjoy a slow-paced meal with those you love. Too often we are in a hurry and don’t slow down to enjoy each other. We think brunch at Luna’s over a bloody Maria or mimosas is just the chance to do that,” Seifried said.
